TEXAS CASSEROLE 
4 strips bacon, chopped
1 onion, chopped
1 green pepper, chopped
1 1/2 lbs. Knockwurst or hotdogs
1 can chopped pimento
1 (1 lb. 12 oz.) can pork and beans
2 (15 oz.) cans chili with beans
2 tbsp. bitters
1 c. shredded sharp cheese

Fry bacon until crisp. Add onions, green pepper, and garlic. Saute until tender. Add pimento, beans, chili, and bitters. Cut meat into 1 inch cubes and add to beans. Stir to blend. Place in 9 x 13 inch casserole. Top with cheese. Bake in preheated 400 degree oven for 20 minutes. Serves 8.
