SQUASH CASSEROLE | |
1 lb. yellow crook neck squash 1 lg. onion 1 stick butter 2 eggs 1/2 c. milk 1 c. bite-sized Cheddar cheese 1 tbsp. sugar 1 c. bread crumbs Salt and pepper to taste Wash and slice squash and onions. Cook until tender in salt water. Drain and add butter. Mash squash and onions until very fine. Add crackers (bread crumbs) eggs, milk, sugar, salt, pepper and cheese. Pour into buttered casserole and bake at 300 degrees for 1 hour. Add bread crumbs and dots of butter to top and brown. |
