TASTY SQUASH CASSEROLE 
8 to 12 crooked neck squash, sliced
1 sm. onion, chopped
1 to 2 tbsp. sugar
1 1/2 rolls Ritz crackers
1 egg
3 to 4 tbsp. butter

Cover squash and onion with water in saucepan. Cook until tender. Drain well. Combine cooked squash with 1-2 tablespoons of butter, egg, sugar and one roll of crushed Ritz crackers. Pour into casserole dish. Heat remaining butter in skillet on stove and add 1/2 roll of crushed Ritz crackers to melted butter. Top squash with buttered cracker crumbs. Bake at 350 degrees until topping is lightly browned.

This casserole is enjoyed by people who normally don't care for squash. The sugar and the crackers give it a different flavor.
