YELLOW SQUASH CASSEROLE 
15 Ritz crackers
2 lbs. squash
1 c. onion
Tabasco sauce
1 c. Velveeta cheese
2 eggs
Salt and pepper

Saute squash and onion until tender. Add Velveeta cheese and let melt. Add eggs, crackers, salt, pepper and Tabasco sauce to taste.

TOPPING:

1 c. Ritz cracker crumbs
Melted butter

Melt butter and add Ritz cracker crumbs until crumbly. Pour on top of casserole. Bake at 350 degrees for 25 to 30 minutes. Serves 8.

FOR MICROWAVE: Saute squash and onions on high until tender. Add melted cheese and other ingredients and cook on high for 10 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
