VEGETABLE & BEEF CASSEROLE 
2 med. yellow squash
1 med. white squash
1 med. zucchini
1 med. onion
2 med. carrots
1/2 med. head cauliflower
1 bell pepper
2 med. potatoes
1/2 lb. ground chuck

Cut all except the ground chuck up and put in microwave steamer dish and steam until tender, about 15 minutes. Brown ground chuck in fry pan, then pat with paper towel to remove all the grease. Put in large bowl and mix with steamed vegetables.

1/2 can cream of mushroom soup
1/2 tsp. cumin powder
1/4 c. oriental style gourmet sauce
1 tsp. accent

Mix well and pour over vegetables. Put in casserole dish and top with a topping of:

1/2 stick butter, melted
18 Ritz crackers, crumbled
1/4 c. cheddar cheese, grated

Pour in oven and bake about 20 minutes or until hot through and through at 350 degrees.

Since microwave ovens vary in power, you may need to adjust your cooking time.
