SQUASH CASSEROLE 
1 lb. squash
1 1/2 c. grated cheese
8 Ritz crackers
1/4 c. milk
1/4 stick butter
1 egg

Boil sliced squash in salted water until tender. Drain off water and mash. Add grated cheese and butter, leaving out enough cheese to sprinkle on top. Add beaten egg and milk. Add crushed crackers to the mixture, season with salt and pepper. Bake in a shallow casserole at 350 degrees until set and brown.
