SQUASH CASSEROLE 
3 c. zucchini and summer squash
1 med. onion, sliced
1 1/2 c. grated sharp Cheddar cheese
1 c. crushed Ritz crackers
2 eggs, beaten
Grated carrots (optional, but adds color)

Spray casserole dish with Pam or equivalent. Layer ingredients: squash, onion, cheese, then crackers. Repeat until all ingredients are gone. Pour beaten eggs over the top. Bake covered 1 hour in 350 degree oven. Uncover for the last 10 minutes of cooking time.
