SUMMER SQUASH CASSEROLE | |
4 c. cubed squash (yellow or zucchini) 1 c. chopped green onion 3 tbsp. butter 1 c. shredded med. Cheddar cheese 1 c. soft bread crumbs 1 c. milk 3 eggs, slightly beaten 1/2 tsp. salt 1/4 tsp. pepper Arrange squash and onion in steamer. Steam 5-10 minutes. Combine squash mixture, butter and cheese - stir until butter and cheese melt. Combine remaining ingredients and stir into lightly greased 2 quart casserole. Bake at 350 degrees 30 to 35 minutes, until set. |
