SQUASH CASSEROLE 
6 med. yellow summer squash or 1 lg. green zucchini
1/2 tsp. salt
1 egg, well beaten
1/2 c. milk
1 c. mushroom soup (10 1/2 oz.)
1 c. chopped onions
1/4 c. chopped green peppers
1 c. grated cheese (cheddar or American)
8 soda crackers, crumbled

Cut up squash/zucchini then boil until tender. Drain and mash; combine all other ingredients, reserving a small (1/4 c.) amount of cheese and crackers. Pour mixture into a greased casserole; sprinkle remaining cheese/cracker mixture on top. Bake uncovered at 350 degrees for 30 minutes or until brown.
