MUSHROOM BROCCOLI SOUP 
2 lg. onions, chopped
3 med. sized carrots, peeled & sliced
1/2 lb. mushrooms sliced thin
4 c. beef broth
1/4 c. chopped parsley
1/2 c. med. sized broccoli
1/4 tsp. black pepper

Place all ingredients in large heavy saucepan and bring to a boil over moderate heat about 4 minutes. Adjust heat so that the mixture bubbles gently and simmer partly covered 40 minutes or until broccoli is tender.
