WELSH CAKES 
2 c. flour
1 tsp. baking powder
1/4 c. sugar
1/2 tsp. cinnamon
1 egg
Up to 1/2 c. milk
1/2 stick butter
1/4 tsp. salt
1/4 tsp. cloves
1/4 tsp. allspice
1/2 c. currants

Rub fat into flour mixed with leavening; stir in sugar and spices and egg slightly beaten. Add milk until the dough is stiff but manageable. Roll out on a floured board to 1/4-inch thickness; cut in circles or squares. Cook on greased griddle 4-5 minutes each side. Cool wrapped in a clean cloth on rack.
