ARTICHOKE NIBBLES 
2 jars marinated artichokes, chopped
1 sm. onion, finely chopped
1 clove garlic, mashed
4 eggs
1/4 c. bread crumbs
1/8 tsp. pepper
1/8 tsp. oregano
1/8 tsp. Tabasco
1/2 lb. Cheddar cheese, grated
2 tbsp. minced parsley

Drain oil from artichokes. Pour oil into a frying pan. (You only need the oil from 1 jar.) Chop artichokes and set aside. Saute onion and garlic in pan with marinated oil.

In a bowl, beat eggs with a fork. Add bread crumbs, seasonings, artichokes and onion. Stir in cheese.

Spray a 7x11 inch baking dish with Pam. Pour batter in pan. Bake at 325 for 30 minutes. Make sure it is firm when you remove from oven.

Cool and cut in 1 inch squares.
