POTATO AND HAM CASSEROLE 
1/2 c. chopped onion
1/2 c. chopped green pepper
6 tbsp. butter
6 tbsp. flour
1/8 tsp. pepper
1 c. chicken broth
1 c. shredded cheddar cheese
1 1/2 c. milk
4 c. cooked ham, diced
1 (10 oz.) pkg. frozen peas, thawed and drained (We use canned peas.)
1 egg, beaten

Saute onion and pepper in butter. Add flour and pepper and stir until smooth. Stir in milk and broth, a little at a time; cook until thick. Combine with ham and peas in 3-quart bowl. Combine potatoes, egg and cheese. Drop by spoonfuls onto first mixture. Bake 45 minutes at 375 degrees.

NOTE: This is to be made with mashed potatoes, however, we mix everything together and slice the potatoes to make escalloped type potatoes.
