KATIE'S STUFFED CHICKEN 
Whole roasting chicken
1-5 jalapeno chilis
1 lg. tomato
1 med. onion

BATTER:

2 tsp. salt
1 tsp. pepper
2 tbsp. chili powder
2 tsp. cumin
2 tbsp. garlic powder

Wash chicken. Remove neck, heart, etc. Mix salt, pepper, chili powder, cumin, garlic powder. Rub spice mixture all over outside of chicken. Cut up chili, tomatoes and onions; mix together. Stuff chicken with chili mixture. Tie up chicken legs and put in roasting pan. Dot with butter. Add neck, heart, etc. to pan, add 1/2 cup water. Bake 1/2 hour at 400 degrees, covered. Then 1/2 hour at 350 degrees, uncovered.
