RAISIN SQUARES OR PIE 
1 1/2 c. seedless raisins
1 1/2 c. boiling water
Grated rind and juice of 1 lemon
2 tbsp. flour
1/2 c. sugar
1 tbsp. butter

Cook raisins in boiling water until tender. Mix flour, sugar and butter with raisins. Continue to cook and stir until thick. Add lemon rind and juice. Cool slightly and bake between two standard pie crusts.

Squares - 400 degrees about 20 minutes.
