RAISIN APPLESAUCE SQUARES
1/2 c. butter
10 packets (10 grams) Equal
1/4 c. applesauce
1 c. sifted all-purpose flour
1 tsp. baking powder
1/4 tsp. cinnamon
1 egg
1 tsp. vanilla extract
1/2 tsp. maple flavoring
1/4 c. raisins

Place a small glass mixing bowl with the butter into the microwave. Cook on medium high setting (70 percent power) for 1 minute. Stir Equal and applesauce into the butter. Sift together flour, baking powder and cinnamon. Stir into butter mixture. Beat in egg. Stir in vanilla extract and maple flavoring.

Spread mixture in an 8 inch glass baking dish. Sprinkle raisins on top. Cook, uncovered, on high setting for 4 minutes. Turn the dish and continue cooking on high setting for 1-1 1/2 minutes, or until set. Cut into 16 squares. Bring to room temperature. Serve with Hot Spiced Tea for a crisp autumn treat. Yield: 16 squares.

Since microwave ovens vary in power, you may need to adjust your cooking time.
