CHEESE CAKE 
1 pkg. yellow cake mix
2 tbsp. oil
2 (8 oz.) cream cheese (solid)
1/2 c. sugar
4 eggs
1 1/2 c. milk
3 tbsp. lemon juice
3 tsp. vanilla
1 can your favorite pie filling

1. Preheat oven to 300 degrees. Take off 1 cup dry cake mix and put aside. In a small bowl combine remaining cake mix and one egg and 2 teaspoons oil. Mix up with fingers until moist and press on bottom of greased 13 x 9 inch pan. Put aside.

2. In large bowl take 3 eggs, reserved cake mix, cream cheese, and sugar and beat until smooth. Add 1 1/2 cups milk, lemon juice, and vanilla. Beat until smooth. Pour on pie crust. Bake at 300 degrees for 45 minutes. When cool, spread your favorite pie filling on top - even better a day later!
