VEGETABLE SOUP SOUTHERN STYLE
This was my mother's recipe. She made it often in the winter time and it will fill you up and keep you warm for hours on a cold day!

2 1/4 lb. ground beef chuck
2 tbsp. bacon grease
1 large onion, chopped
3 lb. potatoes, cut in chunks
2 (28 oz. ea.) cans cans tomatoes, pureed
1 pkg. frozen mixed vegetables
1 pkg. frozen kernel corn
1 pkg. frozen chopped okra
1 pkg. frozen black eye peas
1 (32 oz.) box beef stock
Cajun seasoning
garlic powder
salt and pepper

Brown ground beef and chopped onion in bacon grease, drain well. Return to stove and add 32 oz. beef stock. Slowly simmer covered, stirring occasionally for 2 hours to make the stock for the soup.

Add tomatoes, potatoes, all frozen vegetables, seasonings, except okra. Simmer for 3 hours stirring occasionally to keep from scorching.

Serve hot with cornbread.

Cold rainy day here - heavy snow rest of country. This sounds perfect. Will begin cutting & prepping veg's in a few minutes.
