MANDARIN ORANGE SALAD 
1 bunch red leaf lettuce
1 bunch spinach
3 tbsp. chopped green onions
2 stalks celery, diced
1/2 c. slivered almonds
4 tbsp. sugar
11 oz. can Mandarin oranges, chilled

Wash, dry, tear spinach and lettuce. Add onion and celery. Chill. Place almonds and sugar in skillet (use no grease or oil in skillet) on medium low flame. Stir occasionally until sugar melts. This takes at least ten minutes. Let cool.

DRESSING:

1/2 c. oil
1/4 c. vinegar
1/2 tsp. salt
4 tbsp. sugar
1/4 tsp. pepper
1 tbsp. chopped parsley
3 to 4 drops Tabasco

Mix dressing and store in refrigerator. At serving time add oranges, almonds and toss salad with dressing.
