MANDARIN ORANGE SALAD WITH SWEET
AND SOUR DRESSING
 
1/4 c. slivered almonds
1 tbsp. + 1 tsp. sugar
1/2 head lettuce
1 head romaine
2 stalks chopped celery
2 scallions
1 (11 oz.) can mandarin oranges, drained

SWEET AND SOUR DRESSING:

1/2 tsp. salt
Dash of pepper
Dash of Tabasco
1/4 c. oil
2 tbsp. sugar
2 tbsp. vinegar
1 tbsp. fresh parsley or 1 tsp. dried
Dribble of juice from mandarin orange can

Toast almonds lightly. Melt sugar in fry pan at low heat (watch!). Toss almonds until coated. Cool, break and store at room temperature. Add all dressing ingredients; shake and refrigerate.

Cut up lettuces in large bowl. Add celery, scallions, oranges, and all the dressing. Toss. Add almonds last.
