CALIFORNIA SALAD WITH TARRAGON
DRESSING
 
1/2 c. mayonnaise or salad dressing
1/4 c. salad oil
1 tbsp. lemon juice
1 tbsp. vinegar
1 1/2 tsp. Worcestershire
1 1/2 tsp. soy sauce
1 tsp. dried, crushed tarragon
1/4 tsp. pepper
1 clove garlic, minced
4 c. torn lettuce
2 c. fresh, sliced mushrooms
1 (11 oz.) can mandarin orange sections, drained
1 med. avocado, halved, seeded, peeled and coarsely chopped
1/4 c. slivered almonds or pine nuts, toasted

For salad dressing, in a small bowl use a wire whisk or rotary beater to combine mayonnaise or salad dressing, oil, lemon juice, vinegar, Worcestershire sauce, soy sauce, tarragon, pepper and garlic. Cover and chill several hours.

At serving time, in a large salad bowl toss together lettuce, mushrooms, orange sections, avocado and almonds or pine nuts. Pass the dressing for individual servings.

Makes 6-8 servings.

Best salad dressing we've tasted lately. Forget the oranges, nuts and mushrooms; they don't fit. Add more greens like celery, cucumber and onions. Also less mayo and oil. 1 - 2 tsp dried tarragon Make dressing first -- let sit. Great!!
