TACO SALAD DRESSING 
1 mashed avocado
1 tbsp. lemon juice
1/2 c. sour cream
2 tbsp. Italian salad dressing
1 tbsp. minced onion
1/4 tsp. chili powder
Salt & pepper to taste

Combine all ingredients. At this point the dressing would make a great dip with corn chips, but it would be too thin to use as a dressing. Add more sour cream to get the right consistency. Pour dressing over salad and chill. Just before serving, top with 1 cup shredded cheese (1/2 cheddar, 1/2 Monterey Jack) and 1 cup crumbled corn chips.
