MICROWAVE MIDGET MEATLOAF 
1 lb. ground beef or turkey
1 egg
1/3 c. dry bread crumbs or 8 Ritz crackers
1/3 c. ketchup
2 tbsp. milk or water
2 env. (1/4 oz. ea.) instant onion soup

Combine all ingredients. Shape mixture into a loaf and place in 8-inch square microwave safe dish. Cover with plastic wrap. Cook at medium 14 to 16 minutes.

To complete: Drain liquid occasionally. Let stand, covered, 5 minutes before serving.

Hint: For even quicker cooking, shape meat into ring shape in 9-inch pie plate. Cook 9 to 10 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.

I made this with ground turkey and added about a half cup of shredded Mozzarella, Herbs of Provence, and some chopped Shallots to replace the soup mix. Next time I'll add some Baby Bella mushrooms. Very moist and tender.
