ORANGE AND ALMOND SALAD WITH
DIJON DRESSING
 
Salad greens (butter or red leaf lettuce)
1 can mandarin oranges, drained
1/2 c. sliced green onions
Sliced mushrooms
Toasted slivered almonds

DRESSING:

1/2 c. salad oil
1/4 c. rice vinegar
1 tbsp. Dijon mustard
Salt and pepper
1 tsp. sugar (or to taste)

Mix together in small jar oil, vinegar, mustard, salt and pepper and sugar; chill.

Toss together torn lettuce leaves, mandarin oranges, onions, mushrooms and almonds with desired amount of salad dressing. 6 servings.

Dressing makes enough for a double recipe.
