ORANGE-ALMOND SALAD 
1 head Romaine lettuce, torn
1 sm. can mandarin oranges
3 scallions, chopped
2 celery stalks, chopped or sliced
1/2 c. sliced toasted almonds
1/4 c. wine vinegar
1/2 c. salad oil
1/2 tsp. sugar
1/2 tsp. Dijon mustard

Toss lettuce, scallions and celery in bowl. Drain liquid from oranges. Add oranges and almonds. Whisk together oil, vinegar, sugar and Dijon mustard. Toss dressing and salad just before serving.
