ANGEL BISCUITS
This recipe makes biscuits that really are as light as angel wings.

5 cups all-purpose flour
1/4 cup sugar
1 tsp. salt
3 tsp. baking powder
1 cup shortening (Crisco)
1 pkg. dry yeast (or equivalent)
2 tbsp. warm water
1 tsp. baking soda
2 cups buttermilk

Mix flour, sugar, salt and baking powder; cut in shortening until mixture is crumbly. Set aside.

Dissolve yeast in warm water; add baking soda and buttermilk. Stir yeast mixture into dry ingredients and mix well. Chill.

When ready to use, roll 1/2-inch thick on floured board. Cut and dip in melted butter. Bake at 400°F or 425°F, depending on your oven.

Makes about 4 dozen.
