CHICK PEA AND GREEN BEAN SALAD 
1/2 c. olive oil
2 scallions, sliced thin
1 tbsp. red wine or cider vinegar
1 tbsp. lemon juice
2 tsp. garlic, minced
1/2 tsp. salt
1/4 tsp. pepper
Few grains ground red pepper
1 lb. green beans, cut into 2" pieces
1 (16 oz.) can chick peas, drained

Mix oil, scallions, vinegar, lemon juice, garlic, salt and peppers. Whisk until smooth. Cook beans 2 minutes in boiling water; drain, rinse under cold water and drain again. Put beans and chick peas in bowl and toss with dressing. Chill. Let stand at room temperature 30 minutes before serving. Makes 5 cups.
