RHUBARB FLUFF 
3 c. stewed rhubarb
Red food coloring
Grated rind of 1/2 lemon
1 tbsp. lemon juice
1 c. stiff whipped cream (try Dream Whip or Cool Whip)

Sweeten rhubarb to taste. Add just enough red food coloring to give a rosy tint. Add lemon rind and lemon juice. Chill and just before serving gently fold in whipped cream. Serve in sherbet or parfait glasses.
