FRESH APPLE CAKE II 
1 c. cooking oil
2 c. sugar
2 well-beaten eggs
3 c. flour
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
2 tsp. vanilla
3 c. chopped fresh apples

Combine cooking oil and sugar. Add well-beaten eggs; measure and sift together dry ingredients. Add dry ingredients to first mixture. Add little at a time. Add vanilla and chopped apples. Bake in Bundt of loaf pan for 55 minutes at 300 degrees. This cake will keep moist for days.
