MINI CHEESECAKES LOW CHOLESTEROL 
1 ready made mini graham cracker shells (6)
3 pkgs. (3 oz. each) cream cheese, softened
1/3 c. plus 1 tsp. sugar
1 egg at room temperature
1/4 c. imitation sour cream
1/2 tsp. vanilla extract
2 tsp. lemon juice
Cranberry sauce for garnish

Preheat oven to 350 degrees. In medium bowl beat cream cheese and 1/3 cup sugar until fluffy, about 2 minutes. Add egg, lemon juice and vanilla; beat 3 minutes more. Spoon filling evenly into cups. Bake in center of oven for 20 minutes. Cool on wire rack for 10 minutes.

In small bowl combine sour cream and remaining 1 teaspoon of sugar. Spread on cheese cakes and return to oven for 5 minutes. Cool on rack; refrigerate. Garnish with cranberry sauce. Serves 6.
