LOW FAT & LOW CHOLESTEROL STUFFED BAKED POTATOES | |
6 lg. baking potatoes 1/2 c. or more cottage cheese Garlic & salt to taste (or dash) 4 green onions, minced Paprika Low fat cheese Bake potatoes at 425 degrees for 60 minutes or until done. Cut a slice from top of potatoes and scoop out the pulp. Whip cottage cheese in blender until creamy. Mash the potato pulp and blend enough of the whipped cottage cheese to make a light, fluffy mixture. Stir in green onions. Spoon the mixture back into the shells, mounding it slightly. Place the stuffed potatoes on a baking sheet, dust the top with low-fat cheese and paprika and return to the oven until lightly brown. |
