POTATO CASSEROLE (Low Fat) 
2 lb. frozen hash brown potatoes
2 cans potato soup
2 c. low-fat Cheddar cheese, grated
1 c. sour cream or non-fat yogurt
1/2 c. chopped onions
1 tsp. salt
1 tsp. pepper

Let hash browns thaw. Mix all ingredients. Be sure potatoes are separated. Mix well. Bake in casserole dish at 300 degrees for 1 hour.

the low fat potato casserole is really good and I always buy hash browns that are not salted. You have to be sure to read the labels and not assume they are unsalted just like with frozen french fries or you will end up with a dish that defeats the purpose of trying to be on the more healthy side!
