BAKED BEANS | |
1 lb. dry Navy beans (northern) 6 c. cold water 1 tsp. salt 8 oz. bacon cut in 1 inch pieces 1/2 c. brown sugar 1/4 c. molasses 1/4 c. dark corn syrup 1 med. onion 2 tsp. dry mustard 1/4 c. ketchup 1 tsp. baking soda 1 tsp. ginger Rinse beans. Combine beans and water in a large saucepan. Cover and heat to boiling and boil 2 minutes. Remove from heat and let stand one hour or overnight. Add salt and simmer one hour or until beans are tender, drain. To the beans add bacon, brown sugar, molasses, onion, mustard, ketchup, corn syrup, ginger, soda. Add enough water to cover and bake at 325 degrees until beans are brown. If they become too dry, add more of the water, syrup, ketchup, etc. Don't use liquid that beans are cooked in. |
