BEET AND HORSERADISH RELISH 
8 cups chopped, peeled, raw beets
8 cups chopped cabbage
2 cups chopped onions
3 cups chopped red and green peppers
8 oz. prepared horseradish
4 cups sugar
2 tbsp. salt
6 cups vinegar

Combine all ingredients in a large pan; bring to a boil. Simmer 10 minutes. Can in hot, sterilized jars.

Makes about 8 pints.
