SEAFOOD CASSEROLE | |
1/2 stick butter 1 c. rice 2 c. chopped onion 2 c. green pepper, chopped 1 c. celery, chopped 1 tbsp. flour 1 tsp. curry powder 4 c. milk 1 can crabmeat 1 can tuna fish 2 lbs. shrimp 1 sm. can mushrooms 3 hard boiled eggs Fry onions, pepper and celery in butter until tender. Add flour and let brown just a little. Add 3 cups milk. Let boil until thick; add salt and pepper. Add tuna, crabmeat and shrimp and mushrooms. In another cup of milk, add 1 tsp. of curry powder and mix; then pour into mixture. Add three boiled eggs, chopped and a dash of Tabasco sauce. Grease casserole dish with butter and add cooked rice. Pour mixture on top and put in oven at 400 degrees for 30 minutes. |
