SEAFOOD CASSEROLE 
1/3 c. chopped onion
1/4 c. butter
1/4 c. flour
1 tsp. salt
1/2 tsp. pepper
1 c. half & half
1 c. milk
2 tbsp. lemon juice
1 c. crab meat
1/2 lb. uncooked shrimp
5 oz. can water chestnuts
2 c. cooked rice
1 c. shredded cheese (cheddar)
2 tbsp. pimento

Saute onions in butter. Add flour, salt and pepper. Gradually add milk, stirring constantly over low heat. Add other ingredients except 1/2 of the cheese. Spoon in casserole. Top with cheese. Bake at 375 degrees for 30 minutes.

Serves 6 to 8.
