FRUITED CHICKEN SALAD | |
4 c. chopped cooked chicken 2 c. diced celery 2 c. halved seedless red or green grapes 1 (15 1/2 oz.) pineapple tidbits, drained 1 (11 oz.) can mandarin oranges, drained 1 c. slivered almonds 1/2 c. mayonnaise 1/2 c. commercial sour cream 2 tbsp. lemon juice 1/4 tsp. salt 1/4 tsp. pepper Combine first 6 ingredients and toss well. Combine mayonnaise, sour cream, lemon juice, salt and pepper. Add to chicken mixture, stirring well. Chill. Serves 8. To determine amount of chicken needed for a recipe count on 1/2 cup chopped chicken per breast half. A whole broiler-fryer yields 2 1/2 to 3 cups chopped chicken. |
