ZUCCHINI BREAD 
3 eggs (or equivalent of egg substitute)
2 c. zucchini, washed, unpeeled & grated
1 c. Canola oil
3 tsp. vanilla (or maple if using wheat germ)
1 c. brown sugar, packed
1 c. white sugar
3 c. flour or 1 c. whole wheat flour plus 1 1/2 c. white flour plus 1/2 c. wheat germ
3 tsp. cinnamon
1/4 tsp. baking powder
1 tsp. baking soda
1 c. nuts, chopped or 1/2 c. raisins & 1/2 c. nuts or 1/2 c. chocolate chips & 1/2 c. nuts (try dates too)

Spray 2 loaf pans with Pam cooking spray. Mix well in blender: Eggs, brown sugar, oil, vanilla or maple and 1 cup grated zucchini. In large bowl, combine dry ingredients with 1 cup white sugar and remaining zucchini. Add blender mixture into dry ingredients, mix well. Pour into pans and bake at 325 degrees for 1 hour or until done (toothpick comes out clean).
