HOMEMADE SALAMI 
2 lb. lean hamburger
2 tbsp. Liquid Smoke
1/4 tsp. mustard seed
1/4 tsp. pepper, black
3 tbsp. tenderquick (Mortons)
3/4 c. water
1/4 tsp. garlic salt
1/4 tsp. onion salt

Mix all ingredients together with potato masher. Form into 2 rolls or 4 small ones. On foil, shiny side in. Refrigerate 24 hours. Punch holes in bottom of foil with fork. Place on rack in flat pan. Bake at 325 degrees for 90 minutes. Put 1/2 cup water in pan for easier cleaning.
