HOLIDAY BRUNCH CAKE 
2 c. flour
2 c. sugar
4 eggs, room temp.
3 c. shredded apples, peeled
1/2 c. raisins
1/2 c. nuts
1 tsp. vanilla
3/4 c. corn oil
2 tsp. cinnamon
1/2 tsp. salt
1 tsp. baking powder
2 tsp. baking soda

Mix all dry ingredients (including apples). Add oil, eggs and vanilla; blend well. Pour into greased pan.

FROSTING:

1 c. chopped pecans
8 oz. cream cheese
1 tsp. vanilla
1 box powdered sugar
1 stick butter

Thin with milk if necessary. Decorate with nuts and maraschino cherries. Bake at 350 degrees for 50 minutes.
