“BLACK BEAN TORTILLA DIP” IS IN:

BLACK BEAN TORTILLA DIP 
1 large can (12-16 oz.) black beans, drained
1 1/2 teaspoons taco seasoning
1 large onion, chopped
1 celery stalk
4 cloves garlic
3 slices bacon, crisply cooked
salt and pepper, to taste
1/2 teaspoon garlic powder
pinch cayenne pepper

Fill a blender container half way with cold water. Cut celery into 3-4 chunks and onion into quarters; process in the blender (with water) until minced. Drain.

In a skillet, sauté celery, onion and bacon together until bacon is crisp, adding whole garlic cloves half way through cooking and allowing them to take on a toasted color and turning them once or twice. Remove the garlic to blender container if they begin to become too dark.

Drain bacon on paper towels. Add to blender along with garlic cloves and garlic powder, taco seasoning, cayenne, celery, onion and drained black beans. Process until well combined but some small chunks of vegetables remain.

Taste and adjust seasonings, adding salt, pepper, or garlic powder (if needed - some taco seasonings contain more salt than others).

Serve with your favorite tortilla chips garnished with slices of jalapeno, if desired. May also be used as a base filling in tacos.

Very tasty, great recipe. I used turkey bacon and ended up having to microwave it to make it crispy. Also, I had to add about 1/4 c. water to my blender to get it to move - I may need a new blender. But w/ my changes, it is definitely something I will enjoy eating and make again.

Delicious! I added the jalapenos to the mix because my family loves spicy food. I had trouble with my blender but it was due to the fact that mine is very old and I need a new one.

This turned out great! I found it very tasty, actually I might reduce some of the seasonings a little next time because it had so much flavor it was a little overwhelming. I was trying to find a hummus like dip without the garbanzo beans (allergy issue), my daughter and I tried it with tortilla chips, carrots, and cauliflower, loved all of them with it! A fun dip for kids!
