MEXICAN TUNA DIP | |
For about 1 1/2 cups dip you will need: 1 can (7 oz.) solid white tuna, packed in water 1/2 onion, grated 3/4 c. mayonnaise 2 tbsp. lemon juice 4 tsp. hot salsa jalapeno Crushed red pepper Corn chips Cucumber rounds, celery and carrot sticks Drain tuna. Mash with fork. Set aside. In medium mixing bowl, combine onion, mayonnaise, lemon juice and the salsa jalapeno, mixing until well combined. Stir in tuna, blending well. Transfer to serving bowl. Cover and chill 1 hour to blend flavors. Sprinkle with the red pepper. Serve with corn chips and fresh vegetables. TIPS: Other sliced vegetables, such as broccoli, zucchini, mushrooms and caulifloweretts, can be used. A great way to lift spirits is with this easy but lively tuna dip perked up with zesty salsa jalapeno. It makes an auspicious beginning for any meal, even in you don't have a south-of-the-border menu. Preparation time: 10 minutes. Chilling time: 1 hour. |
