CARROT CAKE TO DIE FOR! 
1 1/2 c. salad oil
2 c. granulated sugar
4 eggs
2 c. flour
2 tsp. baking powder
1 tsp. salt
2 tsp. cinnamon
3 c. grated carrots
1 c. pecans or walnuts

Combine oil and sugar. Add eggs, one at a time, beating after each. Sift together flour, baking powder, salt and cinnamon. Add to eggs. Fold in carrots and nuts. Grease and flour 3 (9 inch) cake pans. Pour in batter. Bake at 350 degrees for 40 minutes.

ICING:

1 (8 oz.) cream cheese
1 stick butter
1 c. (8 oz.) confectioners' sugar
1 tsp. vanilla

Blend all ingredients together and ice cake (the more icing the better!).
