CARROT - RAISIN SALAD | |
3 c. grated carrots 1 c. crushed pineapple, drained well 1/2 c. chopped pecans or walnuts 1/2 c. raisins 1/2 c. mayonnaise 1/4 c. honey 2 tsp. lemon juice Gently mix carrots, pineapple, raisins and nuts. Combine honey, mayonnaise and lemon juice and pour over first mixture; mix and refrigerate 1 to 2 hours (to chill and blend flavors). Serve on salad plate lined with lettuce. Garnish with a carrot curl. NOTE: If raisins are dry and somewhat hard, put in bowl and cover with warm water then allow to soak a few minutes, then drain off water. |
