DELMONICO POTATOES (10 LBS.) 
2 sticks butter
4 tbsp. flour
2 c. light cream
4 c. Velveeta, cubed
Not quite 1 c. milk
10 lb. potatoes, slightly cooked

Step 1: Melt butter, add flour, cream, milk and cheese.

Step 2: Cook until smooth.

Step 3: Pour over slightly cooked potatoes (in 9x13 pan)

Step 4: Bake 1/2 hour covered, 10 minutes uncovered at 375 degrees.
