BROCCOLI CASSEROLE 
2 pkgs. chopped broccoli
1/2 c. mayonnaise
1 c. grated cheddar cheese
2 well beaten eggs
1 can mushroom soup

TOPPING:

1 stick butter
1 stack crushed Ritz crackers

Cook broccoli according to package directions. Add mayonnaise, cheddar cheese, eggs and mushroom soup (undiluted). Mix well; put into casserole dish. Sprinkle topping over mixture and bake at 350 degrees for about 30 to 40 minutes until bubbly and lightly browned on top.
