MADEIRA SAUCE | |
1/2 c. Madeira wine 1 c. whipping cream, room temperature 1 1/4 c. thinly sliced mushrooms 2 1/2 oz. prosciutto ham, diced 30-40 natural pistachio nuts Pepper to taste Add Madeira to skillet and heat to boiling. Boil until reduced by half. This goes very fast, so watch carefully. Add cream, mushrooms, prosciutto and pistachios; bring to boil again and then reduce heat low enough to continue boiling until again reducing to half and coating a spoon (about 15 minutes). It turns a light brown color. Add pepper; serve immediately. |
