FRENCH COCONUT PIE 
1 stick butter, melted
1 tbsp. flour
3 whole eggs
1/2 c. buttermilk
1 tsp. vanilla
1 1/2 c. sugar
1 1/2 c. coconut

Melt butter and cool. Mix all ingredients together and pour into 2 unbaked pie crusts.

Bake at 350°F for 30 minutes. Then bake at 375°F for 15 minutes.
