BEEF STIR-FRY 
1 lb. lean boneless beef, sliced in 1/4 inch thick strips
1 sm. onion, sliced
1 clove garlic, minced
1/2 lb. fresh broccoli, stems cut in 1/8 inch slices, flowerettes separated
1/2 lb. carrots, cut in 1/8 inch diagonally slices
1 tbsp. low sodium soy sauce

Quickly brown beef strips in hot oil in wok or large skillet, stirring constantly. Add onion, broccoli stems and carrots. Cook until vegetables are hot but crisp, stirring constantly. Add broccoli flowerettes and soy sauce. Cook and stir 1 minute. Makes 4 servings. This also works well with chicken strips.
