ZUCCHINI PRESERVES | |
6 c. shredded and peeled zucchini 6 c. sugar 1 box Sure Jell 1 (#2) can crushed pineapple, drained 2 tbsp. lemon juice (bottled Real Lemon OK) 1 lg. box favorite flavor Jello Boil sugar and zucchini for 6 minutes. Remove from heat and add Sure Jell, drained pineapple and lemon juice. Boil 6 minutes more and remove from heat and add Jello. Stir very well. Seal in jars and store in refrigerator. (I have covered with wax as with jelly and it kept very well.) |
